VEGETABLE EDIBLE OILS

Vegetable oils have been discovered long ago and are used in human diet. Numerous biologically active substances, contained in these oils, provide benefit to the body. Their extensive use is especially actual in present time, as there is a tendency to absence of natural unrefined products, vegetable oils, dietary fiber in the diet of a modern human, while animal fats, simple carbohydrates (sugar) prevail in the diet. Expressed disproportion in chemical composition of the diet becomes more frequent, what results in emergence of alimentary diseases.

Vegetable edible oils are vegetable fats, extracted from seeds and fruits of plants by pressing. Most such oils are the most important food products, containing high rate of unsaturated fatty acids, carotenoids, vitamins and essential microelements. Polyunsaturated fatty acids are of great importance in human body – they provide effect on many organs and systems.

Vegetable oils are of greatest importance for cardiovascular system of a human, as they reduce blood cholesterol level and prevent atherosclerosis.
